Julia Louis-Dreyfus' Orange Cake

Yesturday on Rachael Ray, Julia Louis Dreyfus was a guest and she was there baking her famous orange cake.
So, after tracking down the recipe, while my husband was glued to the tv watching yet another hockey game, I decided to give it a whirl.

Ingredients:
8 TBSP butter softened
3/4 cup white sugar
1/2 cup orange juice
2 eggs separated
rind of 3 oranges
1 1/2cups sifted white flour
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt

Directions:
Preheat oven to 350 degrees F.
Grease 9x9 cake pan
Cream sugar and butter. Slowly add egg yolks, 1 at a time.
Sift together dry ingredients, and blend with mixture, alternating with the orange juice.
Whip egg whites until small peaks form.
Fold into cake mixture.
Pour into 9x9 cake pan, and bake 30-35 mins.

Frosting:
1 8oz pkg cream cheese
2 cups icing sugar
zest of 2 oranges
3 TBSP butter softened

Blend together until creamy.

Once cake is cool, slice in half vertically. Ice center, replace top and ice again.


This recipe got a definite 2 thumbs up from hubby, so I think I'll add it to my non chocolate dessert collection for company.
