My Colleague
Besides being able to work in sweatpants, the excusable missed shower here and there, and not having to deal with annoying co-workers, the best part of working from home has got to be sharing an office with this cute face.

Banana Bran Breakfast Muffins
When I started making these muffins, I really didn't have a recipe, other than using these bran muffins as a starting point.
Luckily they turned out great!
Ingredients:
1cup flour
1 1/2 cups bran
1 tsp. baking soda
1 TBSP baking powder
1/3cup brown sugar
4 ripe bananas mashed
1 egg white
2 tsp. vanilla
3/4cup fat free plain yogurt
Preheat oven to 350.
In large bowl, sift together dry ingredients. Set aside.
In smaller bowl, mash bananas, add remaining ingredients. Blend well.
Dump wet ingredients in with dry ingredients, fold together, do not overmix. Set aside 2 mins.
Grease 12 muffin tins.
Once batter has risen slightly, spoon into muffin tins. Bake at 350 for about 25 mins or until toothpick comes out clean.
This made 12 large muffins.

These are my neighbours.
You can't really see, but on the porch, there's a 4ft Winnie the Pooh banner that says "Merry Christmas". The 5 blow ups are still on the lawn, but thankfully aren't plugged in every night anymore.
Seriously, it's past Valentine's Day, time to turn off the Christmas lights.

Greek Lentil Soup
I have to admit, I was a bit of a skeptic with this recipe.
It was forwarded to me by my aunt, and it was delicious!
I made a few changes, but all in all quite good, and filling!
2 cups red lentils (I used canned lentils because they were cheaper and easier)
2 tbl olive oil
1 lge onion diced
2 tsp salt
8 cloves of garlic minced (yes 8 cloves)
2 carrots diced1
tsp pepper
1/4 tsp red chili flakes
1 tbl rosemary
2 tbl oregano
2 bay leaves
8 cups veggie stock (I used low sodium chicken stock)
zest 1/2 lemon
juice of 2 lemons
1c crumbled feta
I also added a can of diced tomatoes, just for kicks
rinse lentils throughly-drainheat oil in soup pot over med heat and saute onion with 1 tsp of salt until tender. add garlic,carrots,chili,herbs,bay leaf and remaining salt. Add rinsed lentils and veggie stock and bring to boil. reduce heat and simmer partially covered until lentils break down. add zest and lemon juice and salt to taste. ladel into bowls and top with crumbled feta.

Hooray for Family Day!
This weekend was a long weekend thanks to the Province of Alberta! Family Day weekend we went out to the mountains with our friends who invited us to their vacation condo (thanks friends!).
We had a great weekend of eating and lots of drinking!
Hot tubbing, board games and bad movies also followed suit.
But after a weekend of sloth-like behavior we decided to get out into the beautiful mountain air.
Sunday we went up to Panorama, and while we couldn't ski because of baby Camryn we were still able to do some hiking on the trails and ride the gondola.

Hola!~
Hola friends!
So, we're back from the family vacation of 10 - DF & I, my brother/his girlfriend, DF's brother/wife & 2 daughters, and DF's sister/husband.
Good time had by all, although someone wise once told me "once you have more than 3 people, it's called juggling".
So, while Mexico has never been my choice locale, I'm also not one to turn down a vacation. A week on vacation is better than a week of work!
Sitting here at Bar-racuda made me happy everyday. Look at this!

Healthy Tzatziki
Sorry for the bad photo. I decided that this was blog worthy when I got to the bottom of the bowl, so then I had to make this photo look like it's not the last 2 TBSP left in the bowl!
I love this appetizer because you can feel good about eating it with veggies as as dip, or with baked whole wheat pita bread. Great tasty, home made low fat appetizer!

Original Recipe
Healthy Tzatziki
1/2 cucumber shredded then drained in clean dish towel
1 cup fat free plain yogurt
2 TBSP lemon juice
3 cloves garlic
2 TBSP chopped fresh dill
salt & pepper
Directions
Shred cucumber using cheese grater. Place cucumber in a dish cloth, and over the sink wring out the excess juice. Add to the bowl with remaining ingredients. Stir together to combine. Refrigerate at least 4 hours. The longer it sits, the better it tastes.
